Enjoy the most classic and simple Italian dish, that bursts with flavor and takes only minutes to prepare!

Ingredients:

  • 400 grams (14 oz) spaghetti or linguine
  • 50ml (1/2 cup) Terra Surti extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1-2 teaspoons red pepper flakes (adjust to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, finely chopped (optional)
  • Freshly grated Parmesan cheese (optional)

Bring a large pot of salted water to a boil.

Add the spaghetti or linguine and cook according to the package instructions until al dente.

Reserve 1 cup of the pasta cooking water, then drain the pasta.

While the pasta is cooking, heat the extra virgin olive oil in a large skillet over medium heat.

Add the thinly sliced garlic and sauté until it turns golden brown, being careful not to burn it.

Add the red pepper flakes and sauté for another 30 seconds to release their flavor.

Add the cooked pasta to the skillet with the garlic and red pepper mixture.

Toss to combine, ensuring the pasta is well-coated with the oil and garlic mixture.

If the pasta seems dry, gradually add some of the reserved pasta cooking water until you reach the desired consistency.

Toss in the chopped fresh parsley if using.

Serve immediately with freshly grated Parmesan cheese on the side, if desired.

Tips:

  • For added flavor, you can include a squeeze of fresh lemon juice when tossing the pasta.
  • Adjust the amount of red pepper flakes based on your heat preference.
  • Make sure not to overcook the garlic, as burnt garlic can turn bitter.
