  • 4 boneless, skinless chicken breasts
  • 50ml (1/2 cup) Terra Surti extra virgin olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp rosemary, chopped
  • 1 tsp thyme, chopped
  • 1 tsp mint
  • 1 tsp basil
  • 1 tsp oregano
  • Salt and black pepper, to taste


In a medium bowl, whisk together the extra virgin olive oil with garlic, lemon juice, and all the Mediterrean herbs.

Season the marinade with salt and black pepper to taste.

Place the chicken breasts in a bowl and pour the marinade on it, mixing a few seconds to ensure all the pieced are well-coated.

Cover the marinated chicken and refrigerate for at least 2 hours, preferably 4-6 hours, or overnight for the best flavor.

From time to time, mix up the chicken in the bowl and if necessary add more extravirgin olive oil. This allows the flavors to deeply penetrate the meat, making it even more tender and aromatic.

Grill the chicken in a preheated grill or barbecue for 6-7 minutes per side, until the chicken is no longer pink in the center.
