Experience the flavors of the Mediterranean with our delightful dish of Fish in Cherry Tomato Sauce—a taste of sunny shores and vibrant cuisine in every bite!


4 fillets of white fish (such as sea bass, cod, or snapper)

330 g (1 ½ cups ) Terra Surti Cherry Tomato Sauce

2 cloves garlic, minced

1 small onion, finely chopped

30 gr (1/4 cup) black olives, pitted and sliced

2 tbsp capers, drained

50 ml (1/4 cup) dry white wine

fresh basil leaves, chopped

2 tbsp Terra Surti extravirgin olive oil


Put in a pan the chopped onion and 1 tablespoon of extravirgin olive oil and cook for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Add the fish fillets and season with salt.

Pour in the white wine, stirring to deglaze.

Add the cherry tomato sauce, olives, and capers. Cook for about 7-10 minutes until the fish turns white and the tomato sauce reduces to the desired consistency, allowing the flavours to meld together.

Serve the fish sprinkling with the chopped fresh basil over the top and a drizzle of extravirgin olive oil.
