Ingredients:
- 1 Pizza dough
- 190gr (1 cup) Eggplants Cream Terra Surti
- 140 gr (1 cup) Crispy speck
- 15 gr ( 2 tbsp) Toasted almonds
- 250gr (1 cup) Buffalo mozzarella shredded
- Extra virgin olive oil Terra Surti
- Salt and pepper to taste
Instructions:
- Preheat your oven to the highest temperature setting, typically around 475°F (245°C).
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Spread a layer of eggplant cream evenly over the pizza dough, leaving a small border around the edges.
- Tear or slice the buffalo mozzarella and distribute it over the eggplant cream.
- Place the crispy speck on top of the mozzarella.
- Sprinkle the toasted almonds over the pizza.
- Drizzle a little extra virgin olive oil over the pizza.
- Season with a pinch of salt and a grind of black pepper to taste.
- Carefully transfer the pizza to a preheated pizza stone or baking sheet.
- Bake in the preheated oven for 10-15 minutes or until the crust is golden and the toppings are bubbly and lightly browned.
- Once out of the oven, drizzle a bit more extra virgin olive oil over the pizza for an added touch of flavor.
