These Mediterranean Wraps are perfect for a light lunch or a healthy, flavorful snack!
Ingredients:
- 4 large tortillas or flatbreads
- 190gr (1 cup) Terra Surti Eggplants Cream
- 190 gr (1 cup) hummus
- 1 cucumber, thinly sliced
- 150gr (1 cup) cherry tomatoes, halved
- 60 gr (1/2 cup) olives, pitted and sliced
- 80gr (1/2 cup) crumbled feta cheese
- 1/4 red onion, thinly sliced
- Fresh spinach or mixed greens
- Fresh parsley or basil, chopped
- Terra Surti extravirgin olive oil
- Salt and pepper to taste
Lay out the tortillas or flatbreads on a clean surface.
Spread a generous layer of eggplant cream over each tortilla.
Add a layer of hummus on top of the eggplant cream.
Add the Vegetables:
Distribute the cucumber slices, cherry tomatoes, olives, red onion, and fresh spinach or mixed greens evenly over each tortilla.
Add the Toppings:
- Sprinkle crumbled feta cheese on top of the vegetables.
- Garnish with chopped parsley or basil.
Season:
- Drizzle a little extravirgin olive oil over the filling.
- Season with salt and pepper to taste.
Wrap It Up:
- Carefully roll up each tortilla tightly, folding in the sides as you go to create a secure wrap.
- Cut each wrap in half diagonally for easier eating.
